Ingredients

  • Pasta (fettuccine or linguine) - 160 grams
  • Scallops - 200 grams
  • Heavy cream - 100 ml
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • White wine (Halal) - 50 ml
  • Parmesan cheese (grated) - 30 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the scallops to the skillet and cook for about 2-3 minutes on each side until they are golden brown and just cooked through. Remove the scallops from the skillet and set aside.
  4. In the same skillet, pour in the white wine, scraping any brown bits from the bottom, and let it simmer for 2 minutes to reduce slightly.
  5. Add the heavy cream to the skillet, stirring well. Allow it to simmer for another 2-3 minutes until the sauce thickens slightly.
  6. Stir in the grated Parmesan cheese, chopped parsley, salt, and black pepper to taste. Mix until the cheese is melted and the sauce is smooth.
  7. Add the cooked pasta to the skillet and toss to coat it well in the sauce. Gently fold in the cooked scallops.
  8. Serve immediately, garnished with additional parsley and Parmesan if desired.
