Ingredients
- Pasta (fettuccine or linguine) - 160 grams
- Scallops - 200 grams
- Heavy cream - 100 ml
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- White wine (Halal) - 50 ml
- Parmesan cheese (grated) - 30 grams
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the scallops to the skillet and cook for about 2-3 minutes on each side until they are golden brown and just cooked through. Remove the scallops from the skillet and set aside.
- In the same skillet, pour in the white wine, scraping any brown bits from the bottom, and let it simmer for 2 minutes to reduce slightly.
- Add the heavy cream to the skillet, stirring well. Allow it to simmer for another 2-3 minutes until the sauce thickens slightly.
- Stir in the grated Parmesan cheese, chopped parsley, salt, and black pepper to taste. Mix until the cheese is melted and the sauce is smooth.
- Add the cooked pasta to the skillet and toss to coat it well in the sauce. Gently fold in the cooked scallops.
- Serve immediately, garnished with additional parsley and Parmesan if desired.
