Ingredients

  • Cannelloni pasta - 8 pieces
  • Fresh spinach - 200 grams
  • Ricotta cheese - 150 grams
  • Parmesan cheese - 50 grams, grated
  • Tomato sauce - 300 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet, cooking until wilted, about 3-4 minutes, then remove from heat.
  4. In a mixing bowl, combine the cooked spinach, ricotta cheese, half of the grated Parmesan, salt, black pepper, and a pinch of nutmeg. Mix well until smooth.
  5. Using a spoon, carefully fill each cannelloni tube with the spinach and ricotta mixture.
  6. Spread a layer of tomato sauce on the bottom of a baking dish and arrange the filled cannelloni on top.
  7. Cover the cannelloni with the remaining tomato sauce and sprinkle with the rest of the grated Parmesan cheese.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbly.
  10. Let it cool for a few minutes before serving.
