Ingredients

  • Spaghetti - 160 grams
  • Calamari, cleaned and cut into rings - 200 grams
  • Zucchini, sliced into half-moons - 1 medium (about 150 grams)
  • Garlic, minced - 2 cloves
  • Olive oil - 3 tablespoons
  • Cherry tomatoes, halved - 100 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon, zested and juiced - 1

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced zucchini to the skillet and sauté for 3-4 minutes until they start to soften.
  4. Add the calamari rings and cook for another 3-4 minutes until they turn opaque and are cooked through.
  5. Stir in the cherry tomatoes and cook until they soften, about 2-3 minutes.
  6. Add the cooked spaghetti to the skillet, along with the reserved pasta water, lemon juice, and lemon zest. Toss everything together until well combined. Season with salt and black pepper to taste.
  7. Remove from heat and stir in the chopped parsley before serving.
