- Spaghetti - 150 grams
- Calamari, cleaned and cut into rings - 200 grams
- Extra virgin olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Cherry tomatoes, halved - 150 grams
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - a pinch (optional)
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the calamari rings to the skillet and cook for about 2-3 minutes until they turn opaque and are just cooked through.
- Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they soften.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the calamari and tomatoes.
- Toss everything together, adding the reserved pasta water a little at a time until the desired sauce consistency is achieved.
- Stir in the chopped parsley, lemon juice, and season with salt, black pepper, and red pepper flakes if using.
- Serve immediately, garnished with additional parsley if desired.
