  • Spaghetti - 150 grams
  • Calamari, cleaned and cut into rings - 200 grams
  • Extra virgin olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Cherry tomatoes, halved - 150 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - a pinch (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the calamari rings to the skillet and cook for about 2-3 minutes until they turn opaque and are just cooked through.
  5. Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they soften.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the calamari and tomatoes.
  7. Toss everything together, adding the reserved pasta water a little at a time until the desired sauce consistency is achieved.
  8. Stir in the chopped parsley, lemon juice, and season with salt, black pepper, and red pepper flakes if using.
  9. Serve immediately, garnished with additional parsley if desired.
