  • Vegan seafood (such as seaweed-based shrimp) - 100 grams
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, steam or blanch the broccoli florets until bright green and tender, about 4-5 minutes.
  3. In a large pan, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant, about 1-2 minutes.
  4. Add the vegan seafood to the pan and cook for an additional 2-3 minutes, stirring occasionally.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the pan with the garlic and vegan seafood.
