Ingredients
- Pasta (spaghetti or linguine) - 160 grams
- Broccoli florets - 200 grams
- Anchovy fillets (canned in oil) - 4 fillets
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 3 tablespoons
- Red pepper flakes - 1/2 teaspoon (optional)
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional, for serving) - 20 grams
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the anchovy fillets to the skillet, breaking them apart with a wooden spoon. Stir until they dissolve into the oil.
- Add the broccoli florets and red pepper flakes (if using) to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the broccoli is tender but still bright green.
- Once the pasta is ready, reserve 1/2 cup of pasta water and drain the rest. Add the drained pasta to the skillet with the broccoli and anchovies.
- Pour in the reserved pasta water and lemon juice, stirring to combine. Season with salt and black pepper to taste.
- Cook for an additional 2 minutes, allowing the flavors to meld. Serve hot, optionally garnished with grated Parmesan cheese.
