Ingredients

  • Pasta (spaghetti or penne) - 150 grams
  • Broccoli florets - 200 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Red chili flakes - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons (for a cheesy flavor)
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red chili flakes, sautéing for 1-2 minutes until fragrant.
  3. Add the broccoli florets to the skillet and season with salt and black pepper. Sauté for about 5-7 minutes until the broccoli is tender but still vibrant green.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the broccoli.
  5. Pour in the reserved pasta water and lemon juice, tossing everything together over low heat for 1-2 minutes until well combined.
  6. Sprinkle nutritional yeast over the pasta and mix well. Adjust seasoning if necessary.
  7. Serve hot, garnished with chopped parsley.
