Ingredients

  • Pasta (spaghetti or orecchiette) - 160 grams
  • Broccoletti - 200 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, bring another pot of water to a boil. Add the broccoletti and blanch for 2-3 minutes until bright green and tender. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Add the blanched broccoletti to the skillet and toss to coat in the garlic oil. Season with salt and black pepper to taste.
  5. Once the pasta is cooked and drained, add it to the skillet with the broccoletti. Toss everything together, adding a splash of pasta cooking water if needed to help combine.
  6. Finish with a squeeze of lemon juice and sprinkle with nutritional yeast if using. Serve hot and enjoy!
