- Broccoletti - 200 grams

- Red pepper flakes - 1/2 teaspoon

- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, bring another pot of water to a boil. Add the broccoletti and blanch for 2-3 minutes until bright green and tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the blanched broccoletti to the skillet and toss to coat in the garlic oil. Season with salt and black pepper to taste.
- Once the pasta is cooked and drained, add it to the skillet with the broccoletti. Toss everything together, adding a splash of pasta cooking water if needed to help combine.
- Finish with a squeeze of lemon juice and sprinkle with nutritional yeast if using. Serve hot and enjoy!
