- Spaghetti - 200 grams
- Bottarga (cured fish roe) - 50 grams
- Extra virgin olive oil - 4 tablespoons
- Garlic - 2 cloves, thinly sliced
- Red pepper flakes - 1/2 teaspoon
- Parsley (fresh, chopped) - 2 tablespoons
- Lemon - 1, zested and juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the sliced garlic and red pepper flakes to the skillet, cooking gently until the garlic is golden and fragrant, about 2-3 minutes.
- Once the spaghetti is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
- Add the drained spaghetti to the skillet with the garlic oil, tossing to coat.
- Grate the bottarga over the pasta, adding the lemon zest and juice, and toss everything together, adding reserved pasta water as needed to create a light sauce.
- Season with salt and black pepper to taste, and stir in the chopped parsley.
- Serve immediately, garnished with additional grated bottarga and parsley if desired.
