Ingredients

  • Spaghetti - 200 grams
  • Bottarga (cured fish roe) - 50 grams
  • Extra virgin olive oil - 4 tablespoons
  • Garlic - 2 cloves, thinly sliced
  • Red pepper flakes - 1/2 teaspoon
  • Parsley (fresh, chopped) - 2 tablespoons
  • Lemon - 1, zested and juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic and red pepper flakes to the skillet, cooking gently until the garlic is golden and fragrant, about 2-3 minutes.
  4. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  5. Add the drained spaghetti to the skillet with the garlic oil, tossing to coat.
  6. Grate the bottarga over the pasta, adding the lemon zest and juice, and toss everything together, adding reserved pasta water as needed to create a light sauce.
  7. Season with salt and black pepper to taste, and stir in the chopped parsley.
  8. Serve immediately, garnished with additional grated bottarga and parsley if desired.
