Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Baccalà (salted cod) - 150 grams
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Red pepper flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Black pepper - to taste
- Salt - to taste
Steps
- Soak the baccalà in cold water for at least 24 hours, changing the water a few times to remove excess salt.
- After soaking, drain and rinse the baccalà, then cut it into bite-sized pieces.
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the baccalà pieces to the skillet and cook for about 5 minutes, stirring occasionally.
- Add the cherry tomatoes and red pepper flakes to the skillet, cooking for another 5-7 minutes until the tomatoes soften.
- Stir in the cooked pasta, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
- Remove from heat, stir in the lemon juice and chopped parsley, and season with black pepper and salt to taste.
- Serve immediately, garnished with additional parsley if desired.
