Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Baccalà (salted cod) - 150 grams
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Red pepper flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. Soak the baccalà in cold water for at least 24 hours, changing the water a few times to remove excess salt.
  2. After soaking, drain and rinse the baccalà, then cut it into bite-sized pieces.
  3. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the baccalà pieces to the skillet and cook for about 5 minutes, stirring occasionally.
  6. Add the cherry tomatoes and red pepper flakes to the skillet, cooking for another 5-7 minutes until the tomatoes soften.
  7. Stir in the cooked pasta, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
  8. Remove from heat, stir in the lemon juice and chopped parsley, and season with black pepper and salt to taste.
  9. Serve immediately, garnished with additional parsley if desired.
