Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Ripe avocado - 1 medium
  • Garlic - 2 cloves, minced
  • Fresh basil leaves - 20 grams
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved
  • Nutritional yeast - 2 tablespoons (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, in a blender or food processor, combine the avocado, minced garlic, fresh basil, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy.
  3. Once the pasta is cooked, reserve a cup of pasta water and drain the rest. Return the pasta to the pot.
  4. Add the avocado sauce to the pasta, mixing well. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  5. Fold in the halved cherry tomatoes gently to combine.
  6. Serve immediately, garnished with additional basil and a sprinkle of nutritional yeast if desired.
