Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Ripe avocado - 1 medium
- Garlic - 2 cloves, minced
- Fresh basil leaves - 20 grams
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 100 grams, halved
- Nutritional yeast - 2 tablespoons (optional)
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, in a blender or food processor, combine the avocado, minced garlic, fresh basil, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy.
- Once the pasta is cooked, reserve a cup of pasta water and drain the rest. Return the pasta to the pot.
- Add the avocado sauce to the pasta, mixing well. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Fold in the halved cherry tomatoes gently to combine.
- Serve immediately, garnished with additional basil and a sprinkle of nutritional yeast if desired.
