- Pasta (spaghetti or penne) - 160 grams
- Cherry tomatoes - 250 grams, halved
- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh basil - 10 leaves, torn
- Capers - 2 tablespoons, rinsed and drained
- Black olives - 50 grams, pitted and sliced
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced zucchini and red bell pepper to the skillet, cooking for 5-7 minutes until they begin to soften.
- Stir in the halved cherry tomatoes and cook for an additional 5 minutes, allowing them to release their juices.
- Add the cooked pasta to the skillet along with the reserved pasta water, capers, and black olives. Toss everything together and season with salt and black pepper to taste.
- Remove from heat and stir in the torn basil leaves and nutritional yeast if using. Serve immediately, garnished with additional basil if desired.
