Ingredients

  • Pasta (spaghetti or penne) - 160 grams
  • Cherry tomatoes - 250 grams, halved
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 leaves, torn
  • Capers - 2 tablespoons, rinsed and drained
  • Black olives - 50 grams, pitted and sliced
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced zucchini and red bell pepper to the skillet, cooking for 5-7 minutes until they begin to soften.
  4. Stir in the halved cherry tomatoes and cook for an additional 5 minutes, allowing them to release their juices.
  5. Add the cooked pasta to the skillet along with the reserved pasta water, capers, and black olives. Toss everything together and season with salt and black pepper to taste.
  6. Remove from heat and stir in the torn basil leaves and nutritional yeast if using. Serve immediately, garnished with additional basil if desired.
