- Pasta (spaghetti or fettuccine) - 150 grams
- Ricotta cheese - 200 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 1 clove
- Lemon zest - 1 teaspoon
- Fresh basil (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (grated) - 30 grams (optional for serving)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- In a bowl, combine ricotta cheese, lemon zest, chopped basil, salt, and pepper. Mix until smooth.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the drained pasta to the pan with garlic.
- Remove the pan from heat and stir in the ricotta mixture. If needed, add reserved pasta water a little at a time to achieve desired creaminess.
- Serve immediately, garnished with extra basil and grated Parmesan cheese if desired.
