Ingredients

  • Pasta (spaghetti or fettuccine) - 150 grams
  • Ricotta cheese - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Lemon zest - 1 teaspoon
  • Fresh basil (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated) - 30 grams (optional for serving)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. In a bowl, combine ricotta cheese, lemon zest, chopped basil, salt, and pepper. Mix until smooth.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the drained pasta to the pan with garlic.
  5. Remove the pan from heat and stir in the ricotta mixture. If needed, add reserved pasta water a little at a time to achieve desired creaminess.
  6. Serve immediately, garnished with extra basil and grated Parmesan cheese if desired.
