- Red pepper flakes - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Whole grain pasta - 80 grams
- Fresh basil - a handful, torn
- Parmesan cheese - for garnish (optional)
Steps
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
- Add the diced eggplant, carrot, and celery to the pot. Cook for about 5-7 minutes, stirring occasionally until the vegetables start to soften.
- Stir in the canned crushed tomatoes, vegetable broth, dried oregano, red pepper flakes, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Add the whole grain pasta to the soup and cook according to package instructions until al dente, usually about 8-10 minutes.
