  • Canned crushed tomatoes - 400 grams
  • Vegetable broth - 500 milliliters
  • Dried oregano - 1 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Whole grain pasta - 80 grams
  • Fresh basil - a handful, torn
  • Parmesan cheese - for garnish (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
  2. Add the diced eggplant, carrot, and celery to the pot. Cook for about 5-7 minutes, stirring occasionally until the vegetables start to soften.
  3. Stir in the canned crushed tomatoes, vegetable broth, dried oregano, red pepper flakes, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  4. Add the whole grain pasta to the soup and cook according to package instructions until al dente, usually about 8-10 minutes.
  5. Once the pasta is cooked, remove the pot from heat and stir in the torn fresh basil.
