  • Spaghetti - 160 grams
  • Eggs - 2 large
  • Egg whites - 2 large
  • Pancetta - 100 grams, diced
  • Parmesan cheese - 50 grams, grated
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley - for garnish, optional

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta cooks, heat a non-stick skillet over medium heat and add the diced pancetta. Cook until crispy, about 5-7 minutes. Remove from heat.
  3. In a mixing bowl, whisk together the whole eggs, egg whites, grated Parmesan cheese, and a generous amount of black pepper until smooth.
  4. Once the pasta is cooked, reserve about 100 ml of the pasta water, then drain the spaghetti.
  5. Quickly add the hot spaghetti to the skillet with the pancetta. Toss to combine, ensuring the pasta is well-coated with the pancetta fat.
  6. Remove the skillet from the heat and add the egg and cheese mixture to the pasta, stirring rapidly to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until you reach the desired consistency.
  7. Adjust seasoning with salt and more black pepper if needed. Serve immediately, garnished with fresh parsley if desired.
