Steps
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta cooks, heat a non-stick skillet over medium heat and add the diced pancetta. Cook until crispy, about 5-7 minutes. Remove from heat.
- In a mixing bowl, whisk together the whole eggs, egg whites, grated Parmesan cheese, and a generous amount of black pepper until smooth.
- Once the pasta is cooked, reserve about 100 ml of the pasta water, then drain the spaghetti.
- Quickly add the hot spaghetti to the skillet with the pancetta. Toss to combine, ensuring the pasta is well-coated with the pancetta fat.
- Remove the skillet from the heat and add the egg and cheese mixture to the pasta, stirring rapidly to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until you reach the desired consistency.
- Adjust seasoning with salt and more black pepper if needed. Serve immediately, garnished with fresh parsley if desired.
