- Cherry tomatoes - 250 grams, halved
- Avocado - 1 medium, diced
- Fresh basil leaves - 20 grams, chopped
- Extra virgin olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, prepare the sauce by combining halved cherry tomatoes, diced avocado, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and black pepper in a mixing bowl. Gently toss to combine.
- Once the pasta is cooked, drain it and reserve a small cup of the pasta water.
- Add the drained pasta to the bowl with the tomato and avocado mixture. Toss gently to combine, adding a little reserved pasta water if needed to create a light sauce.
- Serve immediately, garnished with extra basil leaves and a drizzle of olive oil if desired.
