Ingredients

  • Pasta (spaghetti or penne) - 160 grams
  • Cherry tomatoes - 250 grams, halved
  • Avocado - 1 medium, diced
  • Fresh basil leaves - 20 grams, chopped
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the sauce by combining halved cherry tomatoes, diced avocado, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and black pepper in a mixing bowl. Gently toss to combine.
  3. Once the pasta is cooked, drain it and reserve a small cup of the pasta water.
  4. Add the drained pasta to the bowl with the tomato and avocado mixture. Toss gently to combine, adding a little reserved pasta water if needed to create a light sauce.
  5. Serve immediately, garnished with extra basil leaves and a drizzle of olive oil if desired.
