  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 100 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the sliced mushrooms and diced carrot to the skillet. Sauté for about 5-7 minutes until the mushrooms are browned and the carrot is tender.
