- Carrot - 1 medium, diced
- Zucchini - 1 small, diced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 100 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the sliced mushrooms and diced carrot to the skillet. Sauté for about 5-7 minutes until the mushrooms are browned and the carrot is tender.
- Stir in the diced zucchini and cook for another 3-4 minutes until slightly softened.
- Add the canned diced tomatoes, vegetable broth, dried oregano, salt, and black pepper. Stir well and let simmer for 10 minutes, allowing the flavors to meld.
