  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
  • Fresh basil - a handful, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the pasta according to package instructions until al dente, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent.
  4. Add the diced bell pepper and zucchini to the skillet, cooking for about 5 minutes until softened.
  5. Stir in the halved cherry tomatoes and fresh spinach, cooking until the spinach wilts. Season with dried oregano, salt, and black pepper.
  6. Pour in the red wine, bring the mixture to a simmer, and let it cook for about 5 minutes, allowing the alcohol to evaporate slightly.
  7. In a large mixing bowl, combine the cooked pasta with the vegetable-wine mixture. If using, stir in the nutritional yeast for added flavor.
  8. Transfer the pasta mixture into a baking dish, spreading it evenly. Bake in the preheated oven for 15-20 minutes until heated through and slightly crispy on top.
