- Zucchini - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Dried oregano - 1 teaspoon

- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
- Fresh basil - a handful, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent.
- Add the diced bell pepper and zucchini to the skillet, cooking for about 5 minutes until softened.
- Stir in the halved cherry tomatoes and fresh spinach, cooking until the spinach wilts. Season with dried oregano, salt, and black pepper.
- Pour in the red wine, bring the mixture to a simmer, and let it cook for about 5 minutes, allowing the alcohol to evaporate slightly.
- In a large mixing bowl, combine the cooked pasta with the vegetable-wine mixture. If using, stir in the nutritional yeast for added flavor.
- Transfer the pasta mixture into a baking dish, spreading it evenly. Bake in the preheated oven for 15-20 minutes until heated through and slightly crispy on top.
