  • Garlic - 2 cloves, minced
  • Fresh basil leaves - 10 leaves, torn
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes (optional) - 1/4 teaspoon
  • Nutritional yeast (optional) - 2 tablespoons for a cheesy flavor

Steps

  1. Bring a large pot of salted water to a boil for the pasta.
  2. While the water is heating, prepare the sauce by dicing the ripe tomatoes and setting them aside.
  3. In a large skillet, heat the olive oil over medium heat, then add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the diced tomatoes to the skillet and cook for 10-15 minutes until they break down and form a sauce, stirring occasionally.
  5. Season the sauce with salt, black pepper, and red pepper flakes (if using). Stir in the torn basil leaves and remove from heat.
  6. Cook the pasta in the boiling water according to package instructions until al dente, usually about 8-10 minutes.
  7. Reserve 1/2 cup of pasta cooking water, then drain the pasta.
  8. Add the drained pasta to the skillet with the tomato sauce, tossing to combine. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.
  9. Serve immediately, garnished with additional fresh basil and nutritional yeast if desired.
