  • Canned crushed tomatoes - 400 grams
  • Red wine - 100 ml
  • Bay leaf - 1
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, cooking until softened (about 5-7 minutes).
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground wild boar to the skillet, breaking it up with a wooden spoon. Cook until browned (about 5-7 minutes).
  4. Pour in the red wine, scraping up any browned bits from the bottom of the skillet, and let it simmer for about 3-4 minutes until reduced slightly.
  5. Stir in the crushed tomatoes, bay leaf, oregano, salt, and black pepper. Bring to a simmer, then reduce the heat to low and let it cook for 30 minutes, stirring occasionally.
  6. While the sauce simmers, cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  7. Remove the bay leaf from the sauce and adjust seasoning as needed. If the sauce is too thick, add a bit of reserved pasta water to reach desired consistency.
  8. Toss the cooked pasta with the sauce until well combined. Serve hot, garnished with fresh parsley.
