- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon

Steps
- Rinse the lentils under cold water and set aside.
- In a large pan, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the rinsed lentils to the pan, followed by the canned crushed tomatoes, vegetable broth, dried oregano, and dried basil. Season with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce heat to low and let it simmer for about 25-30 minutes, or until the lentils are tender and the sauce has thickened. Stir occasionally.
- While the lentil ragù is simmering, cook the pasta according to package instructions in a pot of salted boiling water until al dente. Drain and set aside.
- Once the ragù is ready, adjust the seasoning if necessary. Toss the cooked pasta in the ragù until well coated.
- Serve hot, garnishing with fresh parsley.
