- Halal ground wild boar - 250 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Carrot, finely chopped - 1 medium
- Celery, finely chopped - 1 stalk
- Garlic, minced - 2 cloves
- Canned tomatoes (crushed) - 400 grams
- Red wine (halal) - 100 ml
- Bay leaf - 1
- Fresh rosemary, chopped - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional, for serving) - to taste
- Fresh parsley, chopped (for garnish) - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Increase the heat to medium-high and add the ground wild boar. Cook until browned, about 5-7 minutes, breaking it apart with a spoon.
- Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer until the wine has mostly evaporated, about 3-5 minutes.
- Add the canned tomatoes, bay leaf, and chopped rosemary. Stir well, then season with salt and black pepper to taste.
- Reduce the heat to low, cover the pot, and let the sauce simmer for about 60 minutes, stirring occasionally.
- While the sauce is simmering, cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- Once the sauce is ready, remove the bay leaf and adjust seasoning if needed.
- Toss the cooked pasta with the ragu sauce until well coated. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
