Ingredients

  • Halal ground wild boar - 250 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Carrot, finely chopped - 1 medium
  • Celery, finely chopped - 1 stalk
  • Garlic, minced - 2 cloves
  • Canned tomatoes (crushed) - 400 grams
  • Red wine (halal) - 100 ml
  • Bay leaf - 1
  • Fresh rosemary, chopped - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, for serving) - to taste
  • Fresh parsley, chopped (for garnish) - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Increase the heat to medium-high and add the ground wild boar. Cook until browned, about 5-7 minutes, breaking it apart with a spoon.
  4. Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer until the wine has mostly evaporated, about 3-5 minutes.
  5. Add the canned tomatoes, bay leaf, and chopped rosemary. Stir well, then season with salt and black pepper to taste.
  6. Reduce the heat to low, cover the pot, and let the sauce simmer for about 60 minutes, stirring occasionally.
  7. While the sauce is simmering, cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  8. Once the sauce is ready, remove the bay leaf and adjust seasoning if needed.
  9. Toss the cooked pasta with the ragu sauce until well coated. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
