Ingredients
- Spaghetti - 200 grams
- Fresh mussels - 250 grams
- Cherry tomatoes - 300 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh basil - 10 leaves, torn
- Red pepper flakes - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - for serving (optional)
Steps
- Begin by cleaning the mussels under cold running water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.
- In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they start to soften and release their juices.
- Add the mussels to the skillet, cover with a lid, and cook for about 5 minutes, or until the mussels have opened. Discard any mussels that remain closed.
- Add the cooked spaghetti to the skillet, tossing to combine with the sauce and mussels. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Stir in the torn basil leaves and season with salt and black pepper to taste.
- Serve immediately, garnished with additional basil and grated Parmesan cheese if desired.
