Ingredients

  • Spaghetti - 180 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Lemon (zested and juiced) - 1 large
  • Heavy cream - 100 milliliters
  • Parmesan cheese (grated) - 50 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes, until they turn pink and opaque. Season with salt and black pepper.
  4. Pour in the heavy cream, lemon juice, and lemon zest. Stir well and let simmer for 2 minutes to thicken slightly.
  5. Drain the spaghetti, reserving a little pasta water. Add the pasta to the skillet, tossing to combine with the sauce.
  6. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.
  7. Remove from heat and stir in grated Parmesan cheese and chopped parsley. Adjust seasoning with salt and pepper as needed.
  8. Serve immediately, garnished with extra parsley and Parmesan if desired.
