- Lemon zest - 1 teaspoon
- Heavy cream - 100 ml
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat and sauté the minced garlic for about 1 minute until fragrant.
- Add the lemon juice and lemon zest to the skillet, stirring to combine, then reduce the heat to low.
- Stir in the heavy cream and let it simmer for 2-3 minutes, until slightly thickened.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
- Add the drained pasta to the skillet, tossing to coat it in the lemon cream sauce.
- If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.
- Remove from heat and stir in grated Parmesan cheese, chopped parsley, salt, and black pepper to taste.
- Serve immediately, garnished with additional parsley and Parmesan if desired.
