  • Lemon juice - 60 ml (about 1 large lemon)
  • Lemon zest - 1 teaspoon
  • Heavy cream - 100 ml
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat and sauté the minced garlic for about 1 minute until fragrant.
  3. Add the lemon juice and lemon zest to the skillet, stirring to combine, then reduce the heat to low.
  4. Stir in the heavy cream and let it simmer for 2-3 minutes, until slightly thickened.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
  6. Add the drained pasta to the skillet, tossing to coat it in the lemon cream sauce.
  7. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.
  8. Remove from heat and stir in grated Parmesan cheese, chopped parsley, salt, and black pepper to taste.
  9. Serve immediately, garnished with additional parsley and Parmesan if desired.
