- Pasta (spaghetti or penne) - 160 grams
- Cauliflower - 300 grams, chopped into florets
- Garlic - 3 cloves, minced
- Olive oil - 3 tablespoons
- Vegetable broth - 200 ml
- Nutritional yeast - 2 tablespoons
- Red pepper flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- On a baking sheet, toss the cauliflower florets with 2 tablespoons of olive oil, salt, and black pepper. Roast in the oven for 20 minutes, or until golden and tender.
- While the cauliflower is roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the pasta.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the roasted cauliflower to the skillet, followed by the vegetable broth, nutritional yeast, and red pepper flakes. Stir to combine and cook for another 3-5 minutes.
- Use a fork or potato masher to gently mash some of the cauliflower, creating a creamy sauce consistency. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
- Add the cooked pasta to the skillet and toss to coat it with the cauliflower sauce. Adjust seasoning with salt and black pepper as needed.
- Serve hot, garnished with freshly chopped parsley.
