  • Almond milk - 100 ml
  • Gelatin powder - 4 grams
  • Honey - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Protein powder (vanilla flavor) - 30 grams
  • Fresh berries (for topping) - 50 grams

Steps

  1. In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it bloom for about 5 minutes.
  2. In a saucepan, combine the almond milk and honey, and heat over low heat until warm but not boiling.
  3. Add the bloomed gelatin to the warm almond milk mixture and stir until fully dissolved.
  4. Remove from heat and mix in the Greek yogurt, protein powder, and vanilla extract until smooth and well combined.
  5. Pour the mixture evenly into two serving glasses or molds and refrigerate for at least 4 hours, or until set.
  6. Once set, serve chilled, topped with fresh berries.
