Ingredients

  • Strong white flour - 250 grams
  • Sugar - 50 grams
  • Active dry yeast - 5 grams
  • Salt - 4 grams
  • Milk (warm) - 100 ml
  • Unsalted butter (melted) - 30 grams
  • Eggs - 1 large
  • Vanilla extract - 1 teaspoon
  • Mixed dried fruits (raisins, sultanas, candied orange peel) - 70 grams
  • Zest of 1 lemon
  • Zest of 1 orange

Steps

  1. In a small bowl, dissolve the active dry yeast in warm milk and let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the strong white flour, sugar, and salt. Make a well in the center and add the yeast mixture, melted butter, egg, and vanilla extract.
  3. Mix the ingredients together until they form a rough dough, then knead on a floured surface for 10-15 minutes until smooth and elastic.
  4. Incorporate the dried fruits and citrus zests into the dough, kneading gently until evenly distributed.
  5. Shape the dough into a ball and place it in a lightly greased bowl, covering it with a damp cloth. Let it rise in a warm place for about 1-2 hours, or until doubled in size.
  6. Preheat the oven to 180°C (350°F). Once the dough has risen, punch it down and shape it into a round loaf. Place it in a greased small cake tin or a panettone mold.
  7. Let the dough rise again for about 30 minutes, covered with a cloth.
  8. After the second rise, bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a skewer inserted into the center comes out clean.
  9. Remove from the oven and let it cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
