- Dried cranberries - 50 grams
- Candied orange peel - 30 grams
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.
- Add the yeast mixture, soy milk, vegetable oil, orange zest, lemon zest, and vanilla extract to the flour mixture. Stir until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Once risen, gently punch down the dough and fold in the dried cranberries and candied orange peel.
- Shape the dough into a ball and place it in a small, greased cake pan or a deep muffin tin.
- Cover again and let it rise for another 30-45 minutes.
- Preheat the oven to 180°C (350°F).
- Bake the panettone for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
