Ingredients

  • All-purpose flour - 250 grams
  • Granulated sugar - 50 grams
  • Active dry yeast - 5 grams
  • Warm water - 75 ml
  • Soy milk - 100 ml
  • Vegetable oil - 30 ml
  • Orange zest - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Dried cranberries - 50 grams
  • Candied orange peel - 30 grams

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.
  3. Add the yeast mixture, soy milk, vegetable oil, orange zest, lemon zest, and vanilla extract to the flour mixture. Stir until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Once risen, gently punch down the dough and fold in the dried cranberries and candied orange peel.
  7. Shape the dough into a ball and place it in a small, greased cake pan or a deep muffin tin.
  8. Cover again and let it rise for another 30-45 minutes.
  9. Preheat the oven to 180°C (350°F).
  10. Bake the panettone for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  11. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
