Ingredients

  • Chickpea flour - 150 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons (for frying)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon zest - 1 teaspoon
  • Red chili flakes - 1/4 teaspoon (optional)

Steps

  1. In a pot, bring 500 ml of water to a boil.
  2. In a mixing bowl, combine the chickpea flour, salt, black pepper, lemon zest, and red chili flakes.
  3. Gradually pour the boiling water into the dry mixture, whisking continuously to avoid lumps.
  4. Add the chopped parsley and mix until you achieve a smooth batter.
  5. Transfer the mixture back to the pot and cook over medium heat for about 5-7 minutes, stirring constantly until thickened.
  6. Spread the thickened batter onto a greased baking tray, smoothing it out to about 1 cm thickness.
  7. Allow it to cool for at least 15 minutes until firm.
  8. Cut the cooled batter into squares or rectangles.
  9. Heat olive oil in a frying pan over medium heat.
  10. Fry the chickpea squares for about 3-4 minutes on each side until golden brown and crispy.
  11. Remove from the pan and drain on paper towels before serving.
