Ingredients
- Chickpea flour - 150 grams
- Water - 500 ml
- Olive oil - 2 tablespoons (for frying)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon zest - 1 teaspoon
- Red chili flakes - 1/4 teaspoon (optional)
Steps
- In a pot, bring 500 ml of water to a boil.
- In a mixing bowl, combine the chickpea flour, salt, black pepper, lemon zest, and red chili flakes.
- Gradually pour the boiling water into the dry mixture, whisking continuously to avoid lumps.
- Add the chopped parsley and mix until you achieve a smooth batter.
- Transfer the mixture back to the pot and cook over medium heat for about 5-7 minutes, stirring constantly until thickened.
- Spread the thickened batter onto a greased baking tray, smoothing it out to about 1 cm thickness.
- Allow it to cool for at least 15 minutes until firm.
- Cut the cooled batter into squares or rectangles.
- Heat olive oil in a frying pan over medium heat.
- Fry the chickpea squares for about 3-4 minutes on each side until golden brown and crispy.
- Remove from the pan and drain on paper towels before serving.
