  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh parsley - 2 tablespoons (chopped)
  • lemon - 1 (for serving)

Steps

  1. In a medium bowl, combine the chickpea flour and water, whisking until smooth.
  2. Add the salt, black pepper, and chopped parsley to the mixture, and stir to combine.
  3. Let the mixture rest for about 15 minutes at room temperature.
  4. While the mixture rests, heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
  5. Pour a ladleful of the chickpea mixture into the skillet, spreading it evenly to form a thin layer.
  6. Cook for about 3-4 minutes, or until the edges start to lift and the bottom is golden brown.
  7. Flip the panelle and cook for an additional 2-3 minutes until the other side is golden.
  8. Remove from the skillet and place on a paper towel to drain excess oil. Repeat with the remaining mixture.
  9. Serve hot, garnished with lemon wedges.
