- chickpea flour - 100 grams
- water - 300 milliliters
- extra virgin olive oil - 2 tablespoons (for frying)
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh parsley - 2 tablespoons (chopped)
- lemon - 1 (for serving)
Steps
- In a medium bowl, combine the chickpea flour and water, whisking until smooth.
- Add the salt, black pepper, and chopped parsley to the mixture, and stir to combine.
- Let the mixture rest for about 15 minutes at room temperature.
- While the mixture rests, heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
- Pour a ladleful of the chickpea mixture into the skillet, spreading it evenly to form a thin layer.
- Cook for about 3-4 minutes, or until the edges start to lift and the bottom is golden brown.
- Flip the panelle and cook for an additional 2-3 minutes until the other side is golden.
- Remove from the skillet and place on a paper towel to drain excess oil. Repeat with the remaining mixture.
- Serve hot, garnished with lemon wedges.
