Ingredients

  • chickpea flour - 100 grams
  • water - 300 milliliters
  • extra virgin olive oil - 2 tablespoons
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh parsley, chopped - 2 tablespoons
  • lemon zest - 1 teaspoon
  • olive oil for frying - 500 milliliters

Steps

  1. In a saucepan, combine the chickpea flour, water, salt, black pepper, and lemon zest. Whisk until smooth.
  2. Cook the mixture over medium heat, stirring continuously until it thickens and pulls away from the sides of the pan, about 8-10 minutes.
  3. Remove from heat and fold in the chopped parsley.
  4. Pour the mixture into a greased rectangular dish and spread it out evenly. Allow it to cool and set for at least 15 minutes.
  5. Once set, cut the mixture into squares or rectangles.
  6. In a deep frying pan, heat the olive oil over medium-high heat until shimmering.
  7. Fry the chickpea squares in batches until golden brown and crispy, about 3-4 minutes per side.
  8. Remove the fried panelle and drain on paper towels. Serve warm.
