Panelle are delicious Sicilian chickpea fritters, crispy on the outside and soft on the inside, perfect as a savory appetizer. These golden bites are often enjoyed in a sandwich or simply on their own, making for a delightful vegetarian treat.

Ingredients
- chickpea flour - 100 grams
- water - 300 milliliters
- extra virgin olive oil - 2 tablespoons
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh parsley, chopped - 2 tablespoons
- lemon zest - 1 teaspoon
- olive oil for frying - 500 milliliters
Steps
- In a saucepan, combine the chickpea flour, water, salt, black pepper, and lemon zest. Whisk until smooth.
- Cook the mixture over medium heat, stirring continuously until it thickens and pulls away from the sides of the pan, about 8-10 minutes.
- Remove from heat and fold in the chopped parsley.
- Pour the mixture into a greased rectangular dish and spread it out evenly. Allow it to cool and set for at least 15 minutes.
- Once set, cut the mixture into squares or rectangles.
- In a deep frying pan, heat the olive oil over medium-high heat until shimmering.
- Fry the chickpea squares in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove the fried panelle and drain on paper towels. Serve warm.
