Ingredients

  • Whole grain bread - 4 slices

  • Fresh parsley - 2 tablespoons, chopped

  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  2. Add the slices of whole grain bread to the skillet and toast them for about 2-3 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Crack the eggs into the skillet, keeping them separate.
