  • Honey - 2 tablespoons
  • Milk - 200 milliliters
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Butter - for greasing

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small loaf pan with butter.
  2. In a large bowl, mix the cornmeal, rice flour, baking powder, and salt until well combined.
  3. In another bowl, whisk together the honey, milk, egg, and olive oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  5. Transfer the batter to the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  8. Slice and serve warm, optionally with honey or your favorite jam.
