Steps

  1. In a mixing bowl, combine the chickpea flour, water, olive oil, salt, black pepper, rosemary, and garlic powder. Whisk until smooth and let it rest for 15 minutes.
  2. Heat a non-stick skillet over medium heat and add a small amount of olive oil to coat the surface.
  3. Pour about 1/2 cup of the chickpea batter into the skillet, spreading it out evenly to form a pancake.
  4. Cook for 3-4 minutes until the edges start to lift and the bottom is golden brown, then flip and cook for an additional 2-3 minutes on the other side.
  5. Repeat with the remaining batter, adding more oil to the skillet as needed.
