- Veal shank - 500 grams (2 pieces)
- Olive oil - 2 tablespoons
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Dry white wine - 150 ml
- Beef stock - 250 ml
- Canned diced tomatoes - 200 grams
- Bay leaf - 1
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon zest - 1 teaspoon
- Parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a heavy-bottomed pot over medium heat. Season the veal shanks with salt and pepper, and brown them on all sides, about 8-10 minutes. Remove the shanks and set aside.
- In the same pot, add the diced carrot, celery, and onion. Sauté until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1 minute.
- Pour in the white wine, scraping the bottom of the pot to deglaze. Allow the wine to reduce by half, about 3-4 minutes.
- Add the beef stock, canned diced tomatoes, bay leaf, and thyme. Stir to combine, then return the veal shanks to the pot, ensuring they are submerged in the liquid.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 hours, or until the meat is tender and falling off the bone.
- In the last 10 minutes of cooking, mix the lemon zest and chopped parsley in a small bowl to make the gremolata.
- Once cooked, serve the ossobuco hot, topped with the gremolata for a burst of fresh flavor.
