Ingredients

  • Veal shank - 500 grams (2 pieces)
  • Olive oil - 2 tablespoons
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Dry white wine - 150 ml
  • Beef stock - 250 ml
  • Canned diced tomatoes - 200 grams
  • Bay leaf - 1
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon zest - 1 teaspoon
  • Parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a heavy-bottomed pot over medium heat. Season the veal shanks with salt and pepper, and brown them on all sides, about 8-10 minutes. Remove the shanks and set aside.
  2. In the same pot, add the diced carrot, celery, and onion. Sauté until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1 minute.
  3. Pour in the white wine, scraping the bottom of the pot to deglaze. Allow the wine to reduce by half, about 3-4 minutes.
  4. Add the beef stock, canned diced tomatoes, bay leaf, and thyme. Stir to combine, then return the veal shanks to the pot, ensuring they are submerged in the liquid.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 hours, or until the meat is tender and falling off the bone.
  6. In the last 10 minutes of cooking, mix the lemon zest and chopped parsley in a small bowl to make the gremolata.
  7. Once cooked, serve the ossobuco hot, topped with the gremolata for a burst of fresh flavor.
