Ingredients

  • Veal shanks - 500 grams
  • Olive oil - 2 tablespoons
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • White wine - 100 ml
  • Low-sodium chicken broth - 250 ml
  • Bay leaf - 1
  • Fresh thyme - 2 sprigs
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Zest of 1 lemon
  • Parsley - 2 tablespoons, chopped

Steps

  1. Heat olive oil in a large heavy pot over medium heat.
  2. Season the veal shanks with salt and pepper, then sear them in the pot until browned on all sides, about 8-10 minutes. Remove the shanks and set aside.
  3. In the same pot, add diced carrot, celery, and onion. Sauté for about 5 minutes until softened.
  4. Add minced garlic and tomato paste, stirring for another 2 minutes until fragrant.
  5. Pour in the white wine, scraping the bottom of the pot to deglaze, and let it simmer for about 3 minutes.
  6. Return the veal shanks to the pot, then add chicken broth, bay leaf, and thyme. Bring to a simmer.
  7. Cover the pot and reduce the heat to low, allowing it to braise for about 1.5 hours, until the meat is tender.
  8. Stir in lemon zest and chopped parsley before serving.
