- Veal shanks - 500 grams
- Olive oil - 2 tablespoons
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- White wine - 100 ml
- Low-sodium chicken broth - 250 ml
- Bay leaf - 1
- Fresh thyme - 2 sprigs
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Zest of 1 lemon
- Parsley - 2 tablespoons, chopped
Steps
- Heat olive oil in a large heavy pot over medium heat.
- Season the veal shanks with salt and pepper, then sear them in the pot until browned on all sides, about 8-10 minutes. Remove the shanks and set aside.
- In the same pot, add diced carrot, celery, and onion. Sauté for about 5 minutes until softened.
- Add minced garlic and tomato paste, stirring for another 2 minutes until fragrant.
- Pour in the white wine, scraping the bottom of the pot to deglaze, and let it simmer for about 3 minutes.
- Return the veal shanks to the pot, then add chicken broth, bay leaf, and thyme. Bring to a simmer.
- Cover the pot and reduce the heat to low, allowing it to braise for about 1.5 hours, until the meat is tender.
- Stir in lemon zest and chopped parsley before serving.
