Ingredients

  • Zucchini - 200 grams, grated
  • Large eggs - 4
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - to taste
  • Fresh basil - 5 grams, chopped (optional)

Steps

  1. Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture.
  2. In a mixing bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until well combined.
  3. Heat the olive oil in a non-stick skillet over medium heat.
  4. Add the grated zucchini to the skillet and sauté for about 3-4 minutes until slightly softened.
  5. Pour the egg mixture over the zucchini in the skillet, ensuring even distribution.
  6. Cook for 3-4 minutes without stirring, until the edges begin to set.
  7. Using a spatula, gently lift the edges and allow any uncooked egg to flow underneath.
  8. Once the bottom is set and the top is slightly runny, carefully flip the omelette or fold it in half.
  9. Cook for another 2-3 minutes until fully cooked through.
  10. Serve hot, garnished with fresh basil if desired.
