Ingredients

  • Fresh spinach - 200 grams
  • Large eggs - 4
  • Parmesan cheese, grated - 30 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes, halved - 100 grams (optional)

Steps

  1. Wash the spinach thoroughly and chop it coarsely.
  2. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add chopped spinach to the skillet and cook for about 3-4 minutes until wilted. Season with salt and pepper, then remove from heat.
  4. In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.
  5. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Pour the egg mixture into the skillet and allow it to cook for about 2 minutes without stirring.
  6. Add the cooked spinach evenly over one half of the omelette. If using, add halved cherry tomatoes on top of the spinach.
  7. Carefully fold the other half of the omelette over the filling and cook for an additional 2-3 minutes until the eggs are set but still moist.
  8. Slide the omelette onto a plate, cut it in half, and serve hot.
