- Fresh spinach - 200 grams
- Large eggs - 4
- Parmesan cheese, grated - 30 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 1 clove
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes, halved - 100 grams (optional)
Steps
- Wash the spinach thoroughly and chop it coarsely.
- In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add chopped spinach to the skillet and cook for about 3-4 minutes until wilted. Season with salt and pepper, then remove from heat.
- In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Pour the egg mixture into the skillet and allow it to cook for about 2 minutes without stirring.
- Add the cooked spinach evenly over one half of the omelette. If using, add halved cherry tomatoes on top of the spinach.
- Carefully fold the other half of the omelette over the filling and cook for an additional 2-3 minutes until the eggs are set but still moist.
- Slide the omelette onto a plate, cut it in half, and serve hot.
