Ingredients
- Fresh asparagus - 200 grams
- Large eggs - 4
- Parmesan cheese, grated - 30 grams
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 1 tablespoon
Steps
- Wash the asparagus and trim the tough ends. Cut the asparagus into 2-3 cm pieces.
- In a medium skillet, heat the olive oil over medium heat. Add the asparagus and sauté for about 4-5 minutes until tender but still vibrant green.
- In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until well combined.
- Pour the egg mixture over the sautéed asparagus in the skillet. Cook for about 3-4 minutes, gently lifting the edges of the omelette with a spatula to allow uncooked eggs to flow underneath.
- When the omelette is mostly set but still slightly runny on top, cover the skillet with a lid and let it cook for an additional 2 minutes on low heat until fully cooked.
- Gently slide the omelette onto a plate, sprinkle with fresh parsley, and serve immediately.
