Ingredients
- Large eggs - 4
- Cherry tomatoes - 150 grams, halved
- Bell pepper (red or yellow) - 1 medium, diced
- Red onion - 50 grams, finely chopped
- Fresh basil - 10 grams, chopped
- Feta cheese or Ricotta - 100 grams, crumbled
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
- In a non-stick skillet, heat the olive oil over medium heat.
- Add the chopped red onion and diced bell pepper to the skillet and sauté for about 3-4 minutes until softened.
- Add the halved cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.
- Pour the beaten eggs over the sautéed vegetables in the skillet, tilting the pan to ensure even coverage.
- Cook for about 5-7 minutes, gently lifting the edges of the omelette with a spatula to allow uncooked egg to flow underneath.
- Once the bottom is set but the top is still slightly runny, sprinkle the crumbled feta cheese and chopped basil over half of the omelette.
- Carefully fold the omelette in half and let it cook for another 2 minutes until the cheese has melted and the eggs are cooked through.
- Slide the omelette onto a plate, cut in half, and serve hot.
