Steps

  1. In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
  2. In a non-stick skillet, heat the olive oil over medium heat.
  3. Add the chopped red onion and diced bell pepper to the skillet and sauté for about 3-4 minutes until softened.
  4. Add the halved cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.
