Ingredients

  • Eggs - 4 large
  • Heavy cream - 2 tablespoons (30 ml)
  • Truffle oil - 1 tablespoon (15 ml)
  • Parmesan cheese, grated - 30 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh chives, chopped - 1 tablespoon
  • Butter - 1 tablespoon (15 grams)

Steps

  1. In a mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.
  2. Heat a non-stick skillet over medium heat and add the butter. Allow it to melt and coat the pan.
  3. Pour the egg mixture into the skillet, tilting the pan to spread it evenly.
  4. Cook for about 2-3 minutes until the edges start to set, gently lifting them with a spatula to allow the uncooked egg to flow underneath.
  5. Sprinkle the grated Parmesan cheese and chopped chives evenly over one half of the omelette.
  6. Drizzle the truffle oil over the cheese and chives, then fold the other half of the omelette over the filled side.
  7. Cook for an additional minute until the cheese is melted and the omelette is cooked through.
  8. Carefully slide the omelette onto a plate, slice in half, and serve warm.
