- Green olives - 200 grams (pitted)
- Lean ground beef - 100 grams
- Lean ground pork - 100 grams
- Onion - 1 small (finely chopped)
- Garlic - 1 clove (minced)
- Nutmeg - 1/4 teaspoon
- Parsley - 1 tablespoon (chopped)
- Bread crumbs - 50 grams (whole wheat preferred)
- Egg - 1 (beaten)
- Olive oil - 1 tablespoon (for frying)
- Salt - to taste
- Black pepper - to taste
Steps
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until translucent.
- Add the ground beef and pork to the skillet, seasoning with salt, black pepper, and nutmeg. Cook until the meat is browned and fully cooked, then stir in the chopped parsley and remove from heat to cool.
- Once the meat mixture has cooled, take a pitted olive and stuff it with about a teaspoon of the meat mixture. Repeat until all olives are stuffed.
- Set up a breading station: one bowl with the beaten egg and another with the whole wheat bread crumbs.
- Dip each stuffed olive into the beaten egg, ensuring it's fully coated, then roll it in the bread crumbs until well covered.
- Heat olive oil in a frying pan over medium heat. Fry the stuffed olives until golden brown on all sides (about 3-4 minutes). Alternatively, bake them at 180°C (350°F) for about 20 minutes until crispy.
- Remove the olives from the pan and place them on a paper towel to drain excess oil. Serve warm.
