  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 200 ml
  • Heavy cream - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Grated Parmesan cheese - 30 grams (optional, for serving)

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped shallots and sauté for about 2-3 minutes until they are translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the chopped mushrooms and cook for about 8-10 minutes, stirring occasionally, until they release their moisture and begin to brown.
  4. Sprinkle in the dried thyme, oregano, salt, and black pepper, mixing well to combine.
  5. Add the tomato paste to the mushroom mixture and stir to incorporate, cooking for another 2 minutes.
  6. Pour in the vegetable broth, scraping the bottom of the skillet to deglaze any flavorful bits. Bring the mixture to a simmer and cook for about 5 minutes.
  7. Reduce the heat to low, then stir in the heavy cream and simmer for an additional 5 minutes until the sauce thickens slightly.
