- Tomato paste - 2 tablespoons
- Vegetable broth - 200 ml
- Heavy cream - 100 ml
- Fresh parsley - 2 tablespoons, chopped
- Grated Parmesan cheese - 30 grams (optional, for serving)
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallots and sauté for about 2-3 minutes until they are translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the chopped mushrooms and cook for about 8-10 minutes, stirring occasionally, until they release their moisture and begin to brown.
- Sprinkle in the dried thyme, oregano, salt, and black pepper, mixing well to combine.
- Add the tomato paste to the mushroom mixture and stir to incorporate, cooking for another 2 minutes.
- Pour in the vegetable broth, scraping the bottom of the skillet to deglaze any flavorful bits. Bring the mixture to a simmer and cook for about 5 minutes.
- Reduce the heat to low, then stir in the heavy cream and simmer for an additional 5 minutes until the sauce thickens slightly.
- Remove from heat and stir in the chopped fresh parsley. Serve hot, topped with grated Parmesan cheese if desired.
