  • Fresh mushrooms (e.g., cremini or button) - 200 grams, sliced
  • Spinach - 50 grams, chopped
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Fresh basil - 5 grams, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until well combined.
  3. In a large oven-safe skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender and browned.
  5. Stir in the chopped spinach and fresh basil, cooking for an additional 1-2 minutes until the spinach is wilted.
  6. Pour the egg mixture over the mushroom and spinach mixture in the skillet, ensuring it is evenly distributed.
  7. Cook on the stovetop for 3-4 minutes, without stirring, until the edges start to set.
