- Fresh thyme - 1 teaspoon, chopped
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Using a spiralizer or a vegetable peeler, create zucchini noodles from the zucchini. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced cremini mushrooms to the skillet and cook for 5-7 minutes until they are tender and browned.
- Stir in the fresh thyme, salt, black pepper, and red pepper flakes (if using). Cook for an additional 2 minutes.
- Add the zucchini noodles to the skillet and toss gently to combine with the mushroom mixture. Cook for 2-3 minutes until the noodles are slightly softened.
- Remove from heat and stir in the grated Parmesan cheese until well combined.
- Serve immediately, garnished with fresh parsley.
