Ingredients

  • Zucchini - 2 medium

  • Cremini mushrooms - 200 grams, sliced
  • Fresh thyme - 1 teaspoon, chopped
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Using a spiralizer or a vegetable peeler, create zucchini noodles from the zucchini. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced cremini mushrooms to the skillet and cook for 5-7 minutes until they are tender and browned.
  4. Stir in the fresh thyme, salt, black pepper, and red pepper flakes (if using). Cook for an additional 2 minutes.
  5. Add the zucchini noodles to the skillet and toss gently to combine with the mushroom mixture. Cook for 2-3 minutes until the noodles are slightly softened.
  6. Remove from heat and stir in the grated Parmesan cheese until well combined.
  7. Serve immediately, garnished with fresh parsley.
