Ingredients

  • Dark chocolate (85% cocoa) - 100g
  • Eggs - 2 large
  • Heavy cream - 150ml
  • Erythritol (or any low-carb sweetener) - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Pinch of salt - 1

Steps

  1. Melt the dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  2. In a separate bowl, whisk the egg yolks with erythritol and vanilla extract until the mixture is pale and creamy.
  3. Add the melted chocolate to the egg yolk mixture and stir until well combined.
  4. In another bowl, beat the heavy cream until soft peaks form.
  5. Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the cream.
  6. In a clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form.
  7. Fold the egg whites into the chocolate mixture gently, until no white streaks remain.
  8. Spoon the mousse into two serving glasses and refrigerate for at least 2 hours before serving.
