  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Vegetable broth - 500 ml
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped (for garnish)
  • Parmesan cheese - 20 grams, grated (optional)

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the diced zucchini and green bell pepper, cooking for 3-4 minutes until they begin to soften.
  4. Add the chopped broccoli and green beans, and cook for another 3-4 minutes, stirring occasionally.
  5. Pour in the vegetable broth, and add the chopped spinach, dried oregano, salt, and black pepper.
  6. Bring the soup to a gentle boil, then reduce the heat and let it simmer for about 10-15 minutes until all vegetables are tender.
  7. Taste and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh basil and grated Parmesan cheese if desired.
