- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped (for garnish)
- Parmesan cheese - 20 grams, grated (optional)
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the diced zucchini and green bell pepper, cooking for 3-4 minutes until they begin to soften.
- Add the chopped broccoli and green beans, and cook for another 3-4 minutes, stirring occasionally.
- Pour in the vegetable broth, and add the chopped spinach, dried oregano, salt, and black pepper.
- Bring the soup to a gentle boil, then reduce the heat and let it simmer for about 10-15 minutes until all vegetables are tender.
- Taste and adjust seasoning if necessary.
