  • Zucchini - 1 medium, diced
  • Green beans - 100 grams, chopped
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 500 milliliters
  • Canned kidney beans - 200 grams, drained and rinsed
  • Pasta (small shapes like ditalini) - 100 grams
  • Fresh basil - 5 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic, diced zucchini, and chopped green beans, cooking for another 3-4 minutes.
  4. Add the canned diced tomatoes and vegetable broth, bringing the mixture to a simmer.
  5. Once simmering, stir in the kidney beans and pasta, and season with salt and black pepper to taste.
  6. Cook for about 10-12 minutes, or until the pasta is al dente.
  7. Remove from heat and stir in the chopped basil and lemon juice before serving.
