- Green beans - 100 grams, chopped
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 milliliters
- Canned kidney beans - 200 grams, drained and rinsed
- Pasta (small shapes like ditalini) - 100 grams
- Fresh basil - 5 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Stir in the minced garlic, diced zucchini, and chopped green beans, cooking for another 3-4 minutes.
- Add the canned diced tomatoes and vegetable broth, bringing the mixture to a simmer.
- Once simmering, stir in the kidney beans and pasta, and season with salt and black pepper to taste.
