- Celery - 1 stalk, diced
- Zucchini - 1 small, diced
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - for serving
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the diced carrot, celery, and zucchini, and cook for another 5 minutes until the vegetables soften.
- Add the Arborio rice to the pot and toast for 1-2 minutes, stirring frequently.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat to low and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed most of the broth.
- Season with salt and black pepper to taste.
- Stir in the chopped parsley just before serving.
- Ladle the soup into bowls and sprinkle with Parmesan cheese if desired.
