Ingredients

  • Arborio rice - 100 grams

  • Celery - 1 stalk, diced
  • Zucchini - 1 small, diced
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - for serving

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced carrot, celery, and zucchini, and cook for another 5 minutes until the vegetables soften.
  4. Add the Arborio rice to the pot and toast for 1-2 minutes, stirring frequently.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat to low and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed most of the broth.
  7. Season with salt and black pepper to taste.
  8. Stir in the chopped parsley just before serving.
  9. Ladle the soup into bowls and sprinkle with Parmesan cheese if desired.
